Even at 1800# a fairly mild methanol stack injected 392 with cast heads should make enough power to run 8.60
Currently helping out building a 392 now to go into a FED should be on track in a few months

It would be unlikely that you could match your 8 nozzle area exactly when using 16 nozzle out of the box. eg 8 x .032 = .006434, .006434/16 = .000402.
.022 = .0003801, .023 = .0004155. Using .022 will see a bigger increase in nozzle pressure and decrease in main pill.
I would think more nozzles with the increased pressure would result in better atomization but the placement of the nozzles would be more important to see any improvement.

On the subject of water, what is your preference when running alcohol, pressurize the system or just fill.
Obviously pressurizing lowers the boiling point.

Just wondering what brand, resolution, lens angle camera you are using onboard. Will be back in the seat after a long layoff and thought I might get a camera, initially to critique my driving.
